Welcome to the fifth annual #BrunchWeek hosted by Terri from Love and Confections and Christie from A Kitchen Hoor’s Adventures. We are so excited to have you join us this year as we celebrate Brunch and prepare for Mother’s Day. 
 
 

Apples a plenty. Not right this moment, but in the fall. Oh-my-lanta. There’s only two old fashioned apple trees at my mom’s house, but boy do they put on the fruit! When Reiner Fruit sent us Lady Alice apples, it gave me the opportunity to test out some more recipes before fall gets here–which will probably be like next week as quick as this year has already gone! 

I was hoping life was going to start slowing down a tiny bit at the cafe on Saturdays, but that hasn’t happened yet. I’m still busy as can be at the cafe, my photography sessions are increasing, I recently opened an Etsy store that has been doing very well, and I also recently became a Designer for KEEP Collective. My life…. never slows down ha!

It’s also that time of year when the cows and calves all get vaccinated, turned to green grass and get to meet Mr Daddy again! Yes, again… you know–so we can have more baby moo-moo’s! 

We’ve had a great year thus far on the farm. Calving went great and everyone is growing. Planters are in the fields rolling dirt, even after the 2-3 inches of rain we had a short week ago. Our poor neighbors to the south (Missouri) are suffering a bit due to all the rain… makes the whole farm life much more difficult that’s for sure! It won’t be very long and we’ll be in the fields putting up hay so the livestock have something to eat this coming winter. It’s a never ending cycle! I’m just happy that during the summer — it’s kind of our slow period on the farm so I can focus on other things — or maybe it’s just because the days are longer?!

Apple and Creamy Ricotta Crepes

Crepes
  1. 2 eggs
  2. 1/4 teaspoon salt
  3. 1 1/2 cups of milk
  4. 1 1/2 cups all purpose flour
  5. Powdered Sugar for dusting
  6. For Ricotta Filling
  7. 1 15 ounce part skim ricotta cheese
  8. 1/2 cup sugar (Dixie Crystal)
  9. 1 teaspoon cinnamon
  10. Apple Filling
  11. 6 tablespoons butter
  12. 2 medium apples, peeled, cored and chopped into ⅓ inch cubes
  13. 3 tablespoons brown sugar
  14. 1/4 teaspoon ground cinnamon
Instructions
  1. In a small bowl, cream together the ricotta cheese, sugar and cinnamon until smooth
  2. In a saucepan, melt the butter, add the apples, brown sugar and cinnamon cooking 3-5 minutes or until tender
  3. Remove from heat
  4. Meanwhile in a medium bowl, mix together all crepe ingredients until smooth
  5. Heat a large skillet over medium-high heat that has been lightly brushed with oil
  6. Pour 1/3 cup of batter into skillet and swirl around, covering the entire bottom
  7. Brown for 1 minute or less before flipping by lifting one corner and then flipping, continuing to lightly brown the other side
  8. To assemble crepes -- place 2 tablespoons ricotta filling in a line in the center of the crepe, followed by 2 tablespoons apple mixture and roll leaving the ends open
  9. Top with an additional dollop of filling, apples and sprinkle with powdered sugar and cinnamon
